Mediterranean Sardines & Greens

Serves 1 people

  • 1 can King Oscar Mediterranean style sardines
  • 1 serving Olives To Go! Kalamata olives
  • 2 cups spring mix/leafy greens
  • 5 julienned sun-dried tomatoes (2 oz)
  • 2 tbsp chopped red onions


  • ½ tsp sea salt
  • ½ tsp ground black pepper
  • 1 tsp extra virgin olive oil


  1. Open and drain the can of sardines and set to the side
  2. Place your leafy greens into a medium bowl
  3. Open your olives package and slice into ¼’s and put them into the bowl
  4. Take your sun-dried tomatoes and chop into small pieces and place into the bowl
  5. Take your red onion, chop into small chunks, and place into bowl
  6. Take your sardines, smash in the can into chunks, and evenly top the salad mixture
  7. Mix together all salad contents until even
  8. Coat the top of your salad with olive oil, salt, and pepper and enjoy

I know what you’re thinking… SARDINES?!? Yes. Sardines. They may not smell the best, but let me tell you something… they taste amazing. I like to use the King Oscar brand specifically, especially since they have a Mediterranean flavored can that is delicious. The savory, satiating, saltiness of these have such a great mouthfeel. As well as that, they are packed with all kinds of nutrients. They have more minerals in them than the package can even state. All the more reason to find a recipe that utilizes these nutrient-dense, cheap, savory treats! And I’m pretty sure this is a recipe for you.

Although not everyone thinks of sardines as the go-to lunch, you should. They taste amazing, make you feel amazing, and let me tell you… this recipe is amazing. The savory fish work so well with the oily texture of the olives and sun-dried tomatoes, especially sitting atop a bed of deliciously crunchy greens.
