Chimichurri Steak

Ready in 25 minutes

Serves 2 people

  • 2 6 oz steaks
  • 1 medium avocado
  • 8 tbsp chimichurri sauce


  • 1 tsp sea salt
  • 1 tsp ground black pepper
  • 1 tbsp extra virgin olive oil


  1. Heat a large cast-iron skillet over medium heat and preheat the oven to 400 degrees F
  2. On a cutting board, season each side of the steaks evenly with sea salt and black pepper
  3. Once the skillet is hot, drizzle the olive oil in it, swirl it until the bottom is coated, and gently lie the steaks in the oil
  4. Let the steaks cook and don’t move them until the bottom is browned to your liking or enough to hold in the steak’s juices (~6 min)
  5. Flip the steak and gently lie it them on their other side to cook for the same amount of time (~6 min)
  6. Turn off the stovetop, drizzle 1 tbsp chimichurri sauce over the steaks, and place the skillet in the oven for 5-10 minutes depending on the thickness of the cut
  7. While baking, slice the avocado in halves and thinly slice to garnish the steak
  8. Remove the steak from the oven, place on a plate, top with avocado, and drizzle remaining 3 tbsp sauce over top each cut
