Tomato Basil Cauliflower Rice

Ready in 10 minutes

Serves 4 people

  • 69 calories
  • 4 g protein
  • 13 g carbohydrates
  • 0 g fat


  • 1 head cauliflower
  • ½ tsp minced garlic
  • ¼ cup salt-free tomato paste


  • 1 tsp dried oregano
  • 1 ½ tsp dried basil
  • ½ tsp marjoram
  • ½ tsp onion powder
  • ⅛ tsp black pepper


  1. Chop the cauliflower into small enough pieces to where you can place them in a food processor
  2. Intermittently pulse until the cauliflower has formed a rice-like size
  3. In a large saute pan, add all ingredients, cooking for 5-8 minutes stirring occasionally and covering when not
  4. Remove from heat and top with a dash of dried basil for garnish

I have to admit, I accidentally decided to make this recipe. I was struggling to find a way to integrate the cauliflower into my food intake last week because of going out, so I needed to find an easy way to make use of it before it went bad. Hence, an easy way to cook and serve a FULL head of cauliflower in rice form!
