Balsamic Vegetable Medley

Ready in 20 minutes

Serves 2 people

  • 1 Cup brussels sprouts (halved)
  • 1 Cup stir-fry vegetable blend
  • 1 red bell pepper (chopped)


  • 1 tbsp extra virgin olive oil
  • 2 tsp sea salt
  • 2 tsp crushed black pepper
  • 2 tbsp Bertolli balsamic glaze


  1. Ignite your grill and set at a low heat
  2. Chop your brussels sprouts in half and add to a large bowl
  3. Chop your bell pepper into about 1-inch pieces and add to the bowl
  4. Add 1 cup of stir-fry vegetables to the bowl
  5. Drizzle olive oil, sea salt, and black pepper over the vegetables, tossing them until uniformly coated and seasoned
  6. Tear an aluminum sheet into 2 square feet, spreading the vegetables evenly on top, wrapping completely, and covering with a second aluminum sheet
  7. Place the covered vegetables on the grill and let sit for 15 minutes or until cooked to your desire
  8. Remove the vegetables from the grill and evenly place on a plate, drizzling the balsamic glaze evenly over the top to serve

This week I traveled to Colorado to visit my aunt. We had not had the chance to spend some quality time together for years, and I believe I have grown a lot since then, so it was the perfect time to fly out to visit. My girlfriend and I stayed for about 6 days, grilling out most nights, and eating our dinners with a view of the Rockies in the background. As conversation continued to flow smoother than water, I was able to not only reconnect with my wonderful aunt but help her build a strong connection with my girlfriend. As we spent the nights learning more about each other’s lives, finishing at least one bottle of wine before nightfall, we had the ability to work together to cook a cohesive and decadent evening meal. During one of those beautiful nights with all three of us starving after a long day of hiking, she threw together the perfect side to my grilled salmon fillets. That side is the recipe you see above! It was perfect to pair with the salmon, and was a very appreciated introduction to a low-calorie, high-flavor condiment: Bertolli balsamic glaze. I would love for some of you to try this recipe, as it will certainly be one that I hold onto for those fast nights when either I need my vegetables quick or need to prepare a side for a cookout.
