Spicy Tex-Mex Omelet

Ready in 20 minutes

Serves 1 person

  • 451 calories
  • 43g protein
  • 27g carbohydrates
  • 19g fat


  • 2 eggs
  • 2 egg whites
  • ½ cup diced Mexican veggies (onion, green pepper, tomato)
  • ½ cup fat free cheddar/mozzarella mix
  • ¼ avocado (sliced)


  • 2 tbsp Sriracha
  • Canola oil spray
  • ½ tsp salt (if desired)
  • ½ tsp pepper (if desired)
  • ½ tsp cayenne pepper (if desired)


  1. Heat a medium-sized pan on the stove top at medium heat
  2. Crack and whisk eggs and egg whites in a bowl until evenly mixed and sprinkle in desired seasonings
  3. Coat pan with nonstick spray and pour egg mixture on top
  4. Leave the egg cooking for about 4 minutes and cover ½ with veggies
  5. While waiting for the omelet to finish cooking, slice an avocado in half and cut into about 6 slices
  6. Cover vegetables with cheese, let melt, and fold in half
  7. Transfer the omelet to a plate, cover with avocado slices, and top with Sriracha sauce

Every once in awhile I won’t want any meat. I don’t know what exactly gets into me, but I’m sure we’ve all experienced this. The meaty texture or consistency just doesn’t sound as appetizing for the time being. But, in my case at least, I still needed some protein in for the day!

Luckily, eggs and egg whites came in to save the day again! This omelet has Quik Fit written all over it. Tasty, simple, and super healthy. All those micronutrients you’re getting in from the avocado and vegetables are going to make your body as happy as your tongue will be from the delicious taste!

Enjoy this for a delicious tex-mex twist on your breakfast or do what I do, have breakfast for dinner. Because after all, breakfast has the best combinations of food and flavors!
